1 cup soy sauce
1 tablespoon onion powder
1 tablespoon garlic powder
2 tablespoons olive oil
1 1/2 pounds skirt steak, cut into 6-inch pieces
8 ounces shiitake mushrooms, julienned
Mix together the soy sauce, onion powder and garlic powder in a small bowl.
Put a large skillet over high heat, and the olive oil and heat until smoking. Add the steak and cook until starting to brown on the bottom, about 3 minutes. Flip the steak, add the soy sauce mixture and mushrooms to the skillet, toss the mixture together for about 30 seconds and cover. Cook, uncovering the skillet and turning the steak frequently, until the soy sauce has reduced to a glaze and is almost burnt and the steak is medium well to well done, about 4 minutes more; add water as necessary to make sure there is a glaze when finished. Allow to rest for a few minutes before slicing and serving.
