Beggar's Purses

serves 8

INGREDIENTS

2 ripe avocados, halved, pitted, and peeled
1 tsp freshly squeezed lemon juice 
1 tsp kosher salt 
8 slices smoked salmon (about 16 oz)
8 whole chives
2 oz caviar (optional)

DIRECTIONS

In a small bowl, mash the avocado with the lemon juice and salt. Lay out the slices of smoked salmon on a work surface.  Place a dollop of mashed avocado in the center of each slice. Gather the edges of the salmon slice together, so you can form a ruffle at the top of the avocado dollop. Tie the chive around the ruffle to secure the purse. Place a dollop of caviar in the top of the ruffle, if using.
