Broiled Oysters

INGREDIENTS

1 stick unsalted butter
4 cloves garlic, minced
1/4 tsp dried oregano
pinch chili flakes
1/4 cup breadcrumbs
zest of 3 lemons
1/2 cup olive oil
1 tsp salt
1 cup fresh parsley, finely chopped
1 cup grated parmesan cheese, divided
24 oysters

DIRECTIONS

Heat your grill to 500 degrees or your oven to broil. In a small saucepan, gently melt the butter. Add the garlic, oregano, and chili flakes. In a small bowl, combine the breadcrumbs, lemon zest, olive oil, parsley, and half cup of parmesan. The great thing about grilling oysters is that you don't really have to shuck them, which is the hard part about oysters. Just pop the oysters flat side down on the grill and leave them there until they open, about two minutes. Once they open up, tear off the flat shell and return to the grill. Place one tablespoon of butter mixture on each oyster. Cook for about two minutes, then sprinkle about two tablespoons of the breadcrumb mixture on each oyster. Cook for another two minutes, until golden brown around the edges. Top with more parmesan.
