1/2 chicken
1/2 celery root
1 onion
1 head garlic
1 carrot
2 red onions
2 tbsp vinegar
1 tbsp sugar
2-3 sprigs dill
1 tbsp vegetable oil
salt and pepper to season the chicken
For the dough
1 1/4 cup all-purpose flour
2 eggs
1 tbsp vegetable oil
1 tsp salt
Preheat oven to 425 degrees. Rub chicken with salt, pepper and one tablespoon oil. Put it on a roasting tray lined with parchment paper and roast for twenty minutes. Put the roasted chicken in a saucepan, cover with two and a half liters of water and make a broth. Add large chunks of celery, onions, pressed garlic, and carrot cut into pieces of any size. Cook for forty minutes. Add salt to taste. For the dough for the homemade noodles, combine flour, salt, and one tablespoon oil. Knead the dough until firm. Leave it to rest in the fridge for twenty minutes. Cut red onions into thin rings and marinate in vinegar with sugar, salt, and finely chopped dill. Add a dollop of water. Roll dough thinly and slice into long noodles with a knife. When the soup is almost ready, add the noodles and cook for one to two more minutes. The soup is ready. Serve with marinated onions.
