For the salad
1 lb short macaroni
6 oz salami, quartered
1 large green bell pepper, diced
1 large orange bell pepper, diced
1 1/2 cups grape tomatoes, halved
1 cup pepperoncini
1 cup artichoke hearts, quartered
1 cup chopped red onion
1 cup chopped basil
1/2 cup chopped parsley
1/2 cup freshly grated romano cheese
1/4 cup mayonnaise
juice of 1 lemon
freshly ground pepper
For the vinaigrette
1.2 cup extra virgin olive oil
1/4 cup red wine vinegar
2 cloves garlic, minced
4 tsp italian seasoning
1/2 tsp salt
Make the vinaigrette: whisk together all the ingredients in a small bowl. Set aside. Make the salad: cook macaroni according to package directions. Drain and set aside to cool. Combine the salami, peppers, tomatoes, pepperoncini, artichokes, red onion, basil, and parsley in a large salad bowl. Pour the vinaigrette on top and mix well. Fold in the grated cheese, mayonnaise, and lemon juice. Season with freshly grated ground pepper. Cover with plastic and let chill in refrigerator until ready to serve.
