Teresa Palmer's Vegan Pancakes

serves 4

INGREDIENTS

1 ripe banana
1 cup organic gluten-free oats
1 tbsp of apple cider vinegar
1 scoop Lovewell Grow powder
1/8 tsp ground cinnamon
1 tbsp baking powder
1/2 tsp celtic sea salt
1 cup plant-based milk of your choice
1 tbsp chia seeds
1 tsp coconut oil (for cooking)
berries of your choice
coconut yogurt
maple syrup
lemon and sugar, optional, for serving

DIRECTIONS

Put all ingredients into a blender (except coconut oil), and blend until smooth. Add coconut oil to a frying pan over medium-high heat. When melted, add a large scoop of batter into the frying pan. Cook the batter for two to four minutes, until bubbles appear on top, then flip and cook for another two to three minutes or until golden. Serve with some fresh berries, a scoop of coconut yogurt and a drizzle of maple syrup. Or the Aussie way...squeeze a half of lemon and sprinkle with sugar!
