1 large tomato, or 10 cherry tomatoes, sliced
2 slices bread
2 eggs, boiled to soft or jammy center, about 7 minutes
2 tsp chili crisp, such as Mr. Bing brand
2 tbsp mayonnaise
flaky salt, such as Maldon
black sesame seeds, for garnish
Slice tomatoes and top with flaky salt. Toast bread and slice each piece down the center. In a small bowl, combine mayonnaise and chili crisp. Spread each piece of toasted bread with chili mayonnaise. Mash both eggs into chili mayonnaise with a fork to combine. Top each piece of bread with tomato, and then top with egg mixture. Sprinkle and garnish with sesame seeds.
